Founders and owners Sandra and Marc Weinert have always considered sustainability a core value of their work. When they started, this wasn’t as important as it is now. This mindset has given them a head start on their competitors but hasn’t stopped them from continuously evolving and growing in this area. Guldsmeden hotels within Copenhagen are certified in many sustainability efforts. However, one truly stands out compared to other hotels: the Golden Ø, a dining label for restaurants with over 90% organic food and drink. The sustainable option is chosen every time. For example, scaling down on suppliers to minimise CO2 emissions. When sustainable and organic food choices aren’t in season, the sustainable option is chosen. Lastly, circular thinking Guldsmeden hotels have synced their dinner menu with their breakfast options. Creating a dinner menu made with elements from the breakfast creates as little waste as possible.
The second thing that sets Guldsmeden apart from other hotels is their water use. Bryggen Guldsmeden is their first hotel with Orbital Systems Showers in every room. NASA initially developed a shower system for the Mars mission. This means, in short, that it can clean and recycle the shower water. Before the water hits your body, it gets examined and cleaned; if the system encounters contaminated water (shampoo or soap in the water), this gets removed and replaced with clean new water. The system saves between 60-90% of water consumption, depending on the length of bath time.
